Whole Wheat Biscuits
2 cups whole wheat pastry flour
1/2 tsp. soda
1 tsp. baking powder
1/4 cup butter
3/4 - 1 cup plain yogurt
Mix dry ingredients together and with a pastry blender cut butter into the dry ingredients. It should resemble small peas or coarse crumbs. Mix a well in the center and add 3/4 cup of yogurt. Stir until just mixed. You may need to add 1/4 more yogurt gradually until all flour mixes in a (dough should not be sticky).
On a floured surface knead dough just until smooth. Roll into rectangle 1/2" thick; fold in half. Repeat twice; roll into rectangle 1/2 -3/4" thick and cut biscuits. Place on ungreased baking sheet and bake 8-10 minutes at 450*
* I used 1 cup of whole wheat/ 1 cup of unbleached white, as well as, goat yogurt. I also set my oven at 400* and left in a tad longer.
How were they, you say? They disappeared!
