Peanut Butter Cookies
This is the only peanut butter cookie I will ever make. I found this recipe in the Quaker Oats Wholegrain Cookbook; the cookbook is more like a pamphlet but has wonderful things to make. I think I sent off for it, possibly, at least 20 years ago. YIKES! The original recipe is called Peanut Butter Dreams and they are. They're not heavy but light and delicious. It's even better when you use REAL peanut butter. Real peanut butter doesn't have any added sugar, corn syrup, shortening, etc. If anything in may have it's own natural oils. Good peanut butter is readily available even in most stores now; many have a grinder to get it fresh.
Peanut Butter Cookies (Dreams)
1 tsp. vanilla
2 - 1/4 cups ground oat flour*
2 tsp. soda
1/4 tsp. salt
1 cup chopped peanuts (opt)
1 cup butter
1 cup peanut butter
1/2 cup granulated sugar (I use granulated cane juice)
1 cup packed brown sugar
2 eggs
Beat together butter, peanut butter and sugars; blend in eggs and vanilla. Add combined dry ingredients, mix well. Stir in nuts, chill dough about 1 hour. Shape to form 1" balls.Place on ungreased cookie sheet; flatten with for dipped in sugar to form crisscross pattern. Bake in preheated moderate oven (350F) about 10 minutes or until edges are golden brown. Cool on wirer rack. Makes about 4-1/2 dozen.
