A Cocoa Apple Cake (Bundt)
Earlier this month our son got married (the wedding was beautiful), we loaded up a trailer and the back end of our truck with things to take the soon to be newlyweds. This fabulous cake was one of the items and travels very well; in fact actually road on top of the truck unattached a short distance! I found this recipe on a blog I found called Morning Coffee & Afternoon Tea http://coffeeworks.blogs.com/coffee_and_tea/ it's awesome and easy to make. I made the cake to go along with my dinner for the wedding rehearsal, which I also prepared at home and froze to heat through there. (The best idea I had ever). It's not a large bundt cake but it did serve 22-23 people fine. We had slices with a scoop of ice cream. I think I brought 3 slices back (most excellent for me, ha).
I've made it with walnut and with pecans from my Dad in AZ. Another thing I did was dust the top with more cocoa.
Cocoa Apple Cake
Cream together until fluffy:
3 eggs
1/2 cup water
2 cups sugar
2 sticks butter
Sift together, then add to creamed mixture:
2 1/2 cups flour
2 tbsp. of a good cocoa
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. allspice
Fold into other ingredients:
1 cup of walnuts
1/2 c. a good semisweet chocolate chips
2 cups grated apples (I used 2 lrg. granny smith)
1 tbsp of a good vanilla (yes 1 tablespoon)
Spoon mixture into a greased and floured cake pan or bundt pan.
Bake 60-70 minutes at 325 degrees (or until toothpick pulls out dry). Serve 12 + depending on the slices.
