Spicy Oatmeal Crisps

INCREDIBLY DELICIOUS COOKIES ~

I found this recipes on line 4 years ago. I don't make them enough. Very simple - incredible full flavored cookie. You would be sorry you tried them. But you have to like oats and spices!

Preheat oven to 350 degrees. Prepare cookie sheets (2) with light spray of cooking spray or use parchment.

Ingredients:

3/4 c all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. ground allspice
1/2 tsp. rated whole nutmeg
1/4 tsp. salt
1/4 tsp. ground cloves
1/4 tsp. freshly ground black pepper (opt - "but, do")
1 cup packed brown sugar (I used raw and grd. in my grinder)
5 Tbsp. butter, softened
1 tsp. vanilla
1 lrg. egg
1/2 cup regular oats

Lightly spoon (not pack) flour into dry measuring cups and level with flat edge knife. Add to flour next 7 ingredients and combine, set aside.
In medium bowl mix with beaters butter, sugar and vanilla at medium speed until light and fluffy. add egg and beat well. Stir in flour mixture and oats.
Drop by level tablespoons 2 inches apart. They spread. Bake at 350 for 12 minutes or until crisp. Cool on pan 2-3 minutes or until firm - remove to wire cooling racks.

This recipe yield 2 dozen 1 serving - I make mine a bit larger, cook a bit longer and double the batch. It just isn't enough and neither is just one!
