My Fresh Basil Pesto~ with Angel-hair Pasta
Basil Pesto |
1 to 1 1/2 cups of fresh Basil, "hopefully from your garden."
4 - 6 cloves garlic, sm. - med. crushed
1/2 - 1/3 cup toasted walnuts, cooled
1/2 cup freshly grated aged Parmesan, of a good quality
1/2 - 1/3 cups extra virgin olive oil, as needed
1/4 tsp, a couple good pinches, Kosher salt
Multigrain Angel-hair pasta
Rinse off basil removing any dirt pat dry - make sure all moisture is removed. Toast walnuts and cool and grate Parmesan if needed. Place all but the oil and salt in food processor. Give it a few spins then add oil a bit at a time until you get the consistency you desire, you may need more or less. Season with the salt; don't be afraid to taste it - it might need more salt or it might not, but make you sure blend it well before adding more. :)
Cook angel-hair as directed, I made the box but you should make what you need. Once the pasta is done, drain, place in bowl and add as much pesto as you like. Toss and serve immediately.
