Chunky Peach & Cucumber Spicy Salsa ~
You have to love this time of the year with such a fresh variety of fruits and veggie goodness out there! I enjoyed my time last Saturday going to Apple Annie's in Wilcox, my first time (shocking to some I know) and I was quite impressed with their entire set up. I've heard things ~ it was like going to an event, lots of fun.
I do have my own recipe for Peach Salsa using green chili that I've been happy with but thought I'd try another. I found this recipe here from Southern Living the ingredients and direction are below, however and there always seems to be one :) for this recipe I used everything pictured below, minus some of the garlic and cilantro. The jalapenos were below mild so I had to cut through everyone and the last two had the heat I was looking for. I sliced those thin the others as original recipe said.
1 cup diced fresh peaches
1/2 cup diced cucumber
1 jalapeño pepper, seeded (opt) and diced
1 garlic clove, minced
3 TB chopped fresh cilantro
2 TB fresh lime juice
1/2 tsp. kosher salt
Mix all in a small bowl.

The large cucumber I used half and removed a bit of the skin it was a bit tough, it really is all to taste and after I get it where I want I give it another folding together, and cover it. I let it set the longer it does the more flavorful it becomes. On the jalapenos it really up to you since the peaches were beautiful and sweet I didn't want the heat to over take them. It was a prefect balance and I'll be serving it on grilled salmon tonight; as long as it isn't raining! Enjoy
Oh as you've noticed the sliced peaches in the bowl aren't chunky I used those in pie. I wanted you to see how pretty the peaches were.
