Gluten Free Brownie Bites w/ Kahlua Icing

Yesterday I was thinking of chocolate and this is what I came up with. Might I add - yummy big time! Here's my recipe for:

Gluten Free Brownie Bites w/Kahlua Icing

3/4 C. gluten -free all purpose flour
1/4 C. almond flour
1 C. evaporate cane sugar
1/3 C. cocoa
1 tsp. Xanthan
3/4 tsp. soda
1/2 tsp. salt
1/2 C. plain yogurt
3/4 C. plus (around 7oz) milk
3 tbsp. oil
1/2 C. chopped walnuts

Mix altogether, place in prepared (lightly oiled) mini-muffin tins; I have a pan for 24, you will have more than enough and for a few extra. Bake at 350 for 20 - 22 minutes. If you're using a different pan adjust time etc. Let cook in pan for a few minutes, remove and cool the of the time on cooling rack.

Icing
I wanted more of a mocha icing than just cocoa sweet or milk chocolate.
I used about 1 - 1/2 cup powdered sugar, 1/4 C cocoa and Kahlua pouring a little at a time until I got the spreading consistency I wanted. Spread a little on top.
Of course the icing is not for kids and some would prefer not using Kahlua, you can use strong coffee (cooled) reg. or decaf.
