Peach Salsa

Grilled Chicken with my Peach Salsa~

I had the peaches and the chile - hot and sweet - great on grilled chicken or fish. 

In a GLASS bowl put all ingredients:

2-3 cups of fresh peaches (not real soft), peeled and diced small 
1-2 Tbsp of fresh lemon juice (I place and tossed onto peaches directly to keep from discoloring)
1/4- 1/3 cup diced small red onion
1-2 large finely seeded and diced fresh green chili
2-3 Tbsp of olive oil - stir into oil - scant Tbsp honey
fresh cilantro chopped - to taste
pinch of sea salt or 2 pinches of Kosher

Blend together and cover with plastic at room for an hour or long to get the flavors working.
