Lentil and Kale Soup

Lentil and Kale Soup

1 cup dry lentils
7 cups water
4 cups kale or spinach (torn or chopped small)
1 large onion, chopped
1 stalk celery, chopped
3 tomatoes, chopped
1 carrot, chopped
3 Tbsps. fresh parsley chopped
1 bay leaf
1/4 tsp. ground thyme
1 Tbsp Worcestershire sauce
1 pinch pepper




Place all above into a pot - I used a dutch oven - recipe says slow cooker.  I just brought to a boil then turned heat down to simmer until lentils are tender.  Recipe (and I don't know where it came from) says in slow cooker if you'll be gone cook on low.  Also it will become thick almost like a stew.  Mine became thick but after it sat; as in serving leftovers :)
