Strawberry ~ Buttermilk Scones w/ Lemon Glaze


Scone Dough items:
2 Cup Wheat Pastry Flour (200g)*
1Tbsp Baking Powder
1/4 Cup Organic Sugar
6 Tbsp Butter, cut in tablespoon slices
1 Cup Fresh Strawberries, diced various sizes :)
2 Farm Fresh Eggs - plus 1 beaten to brush tops (3 total :D)
1/3 Cup Buttermilk

Glaze items:
Juice from lemon - I used 1/2
Powered sugar - I used maybe 3/4 cup

Pre-heat oven to 400 degrees, I used my baking stone and heated it longer.

Mix together, flour, baking powder and sugar.  Add butter and with pastry cutter/blender mix together like if making a pie crust.  Carefully fold in fresh strawberries "carefully" as not to smash.  Slightly beat together buttermilk and 2 eggs then make a well in the middle of flour - add milk egg mixture.  Stir from the outside in to incorporate moisture and flour well not over kneading.  Turn out of bowl onto a lightly floured service and form by lightly kneading.  Let set with bowl turned on top about 10 or more minutes.   Dough will be soft roll out into a square maybe 8 x 8 or 9's.  Cut into triangles - corner to corner, then each in half corner to corner.  Brush with beaten egg bake for 20 - 23 minutes or until golden brown.

Having lemon juiced and powdered sugar ready, when the scones were done - removed from oven and onto rack placed on top a cookie sheet; mix juice and sugar together to make a glaze - drizzle on top and let cool together. Yum ~

If you've not glazed pastries before, there will be color variations with the temperature of what you are glazing.  Below is glaze drizzled before just starting to cool.
