New Mexico Green Chili Sauce ~

This is the best Green Chili sauce recipe, ever - sooooo good!


New Mexico Green Chili Sauce

2 tbsp butter or lard
2/3 cup chopped onion
2 tbsp flour
1- 1/2 cup chicken or vegetable broth
1 cup (or more)* chopped green chili
1 large clove garlic finely minced
3/4 tsp salt
dash cumin (1/8 tsp)

In a medium - large sauce pan melt butter over medium heat.
Add to the melted butter the chopped onion and saute until soft.
Stir in your flour as if you were making gravy (slight paste)  add broth and stir blending flour through.
Then add remaining ingredients and simmer for 20 minutes or more.
*I added about 1/2 more of chili and it was fine making it a bit hotter.  Of course the heat depends on the heat of the chili.  :)


Serve over shredded beef burro or use in making Green Chili Chicken Enchiladas - - Yum -
